Easy, full of vitamin C and delightfully creamy for summer time. It is a home made blend and mix simple ice cream made from blackcurrent and coconut cream, with a hint of vanilla. If you are also devoted vegan what I am not, you have found your next yummy recipe.

Forget blueberries, there is home grown superfood called blackcurrent, full of vitamin C and with more fibre than any overhyped fruit. I cherrished the summer time spent at the grandparents’ farm but I hated the combing couple of the hedges with the blackcurrent with colours from black to red and white, removing the pits for our jam making and more sessions. It was a different matter at Norfolk farm close to my place now. It has became the natural part of the diet and the quick traybakes with the cottage cheese on Sundays. But the ice cream is a treat. A must during hot summer days, cooling us down.

There is no rocket science and just couple of the ingredients involved. I don’t bother about the blender but it helps to achieve the smooth consistency. I just use the fork to squash and smash any small blackcurrent berries in the bowl, mix the tarty superfood with a good hint of vanilla and a super big amount of sugar. Mix and pour full fat coconut milk. One can. Transfer it into the big container and leave it for at least 6 hours to settle and freeze. That’s all jazz.

 Boom, you have a homemade, summery blackcurrent ice cream, with hardly any fuss. No cooking skills needed. Just a spade to enjoy your summer healthy ice cream.

TIPS HOW USE THE BLACKCURRENT COCONUT ICE CREAM AS SOMETHING ELSE

Instead of eating it frozen, let your blackcurrant coconut ice cream soften to a pourable, soft-serve consistency and use it as a vibrant, dairy-free coulis, glaze, or base for other treats.

Tropical Smoothie Base: Blend the softened ice cream with fresh spinach, bananas, and a splash of water for a rich, antioxidant-packed breakfast smoothie.

Ice coffee : Add a tablespoon of the melted dessert to iced coffee or cold brew. The coconut and blackcurrant add both sweetness and creaminess.

Porridge /Oatmeal Swirl: Stir a spoonful of melted ice cream into warm morning porridge/chia yogurt mix for a rich berry-coconut flavour.

Coulis Pancake or Waffle Topping: Let the ice cream melt slightly and use it as a fruity, creamy syrup over warm British toasted scones or US pancakes or waffles.
